Crisp bacon, gooey cheddar, and soft cooked eggs all grilled in some heavily buttered bread? Yum! I definitely don’t want to know how much fat or cholesterol is in it though.
I found this recipe on Pinterest (June Pinterest Challenge complete already?!) and have been dying to try it out. I made it this weekend for our guests at the ‘Lake House’ and everyone liked it including my picky eater. This one is definitely getting added to the rotation!
Breakfast Grilled Cheese
- 1 pkg bacon
- 1 block of cheddar (I prefer aged cheddar)
- 6 eggs
- 12 slices of bread
Start the bacon in a frying pan.
Meanwhile, set out 6 slices of bread and butter bottom side.
Place 5 slices of cheese across each sandwich.
When bacon has almost reached desired doneness start cooking eggs in a separate pan or on a griddle (I used a griddle because I was cooking for 6 people at once)
Place approximately 2 slices of bacon on each sandwich.
When eggs have almost reached desired doneness (it will cook just a little more once sandwiches are back on the grill) place an egg on each sandwich.
Top each with 2-3 slices of cheese (to help hold it all together).
Butter another slice of bread per sandwich and place on top.
Give egg griddle or pan a quick wipe with paper towel and place assembled sandwiches back on and cook on medium low until golden and cheese is melted. Yum!!
I was thinking it would be tasty to add a little mayo before returning to the griddle, just to make it extra healthy ;)
