Pinterest Challenge August: Pancake Cupcakes

Woohoo! Pinterest Challenges are back! That’s not to say that I haven’t been executing all kinds of stuff off of Pinterest over the summer, but we had such a crazy (and fun!) summer that I just couldn’t keep up with documenting and posting them. One of my faves from last month though was those pancake muffin cups I’ve seen a few times (the one I pinned only links to a photo and not a website, so no idea credit can be given here). It was so easy and so tasty!

Pancake Cupcakes

I premade the pancake mix using the boxed stuff and 1 batch perfectly filled 12 muffin cups. I put out little bowls of add-ins such as chocolate chips, cut up cooked breakfast sausage, banana pieces, and blueberries. The monsters (5, 3, and 1) could even help…they picked what add-ins they wanted in their cupcakes and added it themselves. Monkey added every possible option into one cup, LoveBug loaded his with chocolate chips and well, it was questionable for the 1 year old, but she tried! Then I popped them in the oven for 15 minutes, topped with syrup and whipped cream (which made them look even more like real cupcakes!) and voila! Pancake Cupcakes!

I really didn’t do a good job documenting this because I wasn’t planning on posting about it, but they were such a hit I just had to share (maybe I’ll update with some better pics next time we make them!) 5 thumbs up in our house!

Pancake Cupcakes

  • Servings: 12 cupcakes
  • Difficulty: easy
  • Print
Pancake Cupcakes

Ingredients:

  • prepackaged pancake mix (and required ingredients)
  • cupcake add-ins (chocolate chips, sausage, bacon, bananas, strawberries, etc.)
  • syrup and whipped cream

Directions:

  1. Prepare pancake mix according to package directions
  2. Spray muffin tin with cooking spray and fill 12 muffin cups 3/4 of the way full
  3. Place add-ins into each muffin cup
  4. Bake 15 minutes at 350°
  5. Remove from muffin cups, top with syrup and whipped cream and enjoy!!

***It doesn’t even have to be about Pinterest per se. I mean, we were all already out there on the Internet researching stuff and looking up fun ideas before Pinterest existed. Then Pinterest came along and provided an awesome and easy way to organize all the time we waste surfing the Web into one tidy little package. So now, we go and ‘Pin’ all these amazing ideas on Pinterest, but how many do we actually follow through on? My challenge is to follow through with and document at least 1 each month (baby steps, right?)***
